Traditional Norwegian Molasses Cookies

Carbonate of ammonia AKA baking ammonia can be purchased at some drug and specialty food stores. It usually comes as a lump and needs to be ground to a powder before use. It should be kept in a well sealed container.

Do not confuse baking ammonia with regular, household ammonia used as a cleaner, which is poisonous.


  • 1/4 cup dark molasses
  • 1/4 cup granulated sugar
  • 1/4 cup light cream
  • 1/4 cup butter or margarine
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon crushed cardamom
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ammonium bicarbonate, crushed
  • 1 3/4 cup sifted all-purpose flour


  1. Bring to a boil in a saucepan molasses, sugar, cream and butter (or margarine). Add cloves, ginger, cinnamon, cardamom and nutmeg. Stir in well and remove from heat.
  2. When mixture is lukewarm add crushed carbonate of ammonium.
    Stir gradually into flour. Let dough stand at room temperature over night, with cover or clean cloth over top of bowl.
  3. Roll out as thin as possible on lightly floured board and cut into star and reindeer shapes. Place on lightly greased cookie sheet; bake at 375 F until lightly colored, from 8 to 10 minutes.
  4. Glaze with white of egg and decorate with finely chopped nuts for the stars.
  5. Use strips of almond to accentuate the antlers, hoofs, and tail. Use pieces of raisin or dates for eyes and nose and cut candied cherries into strips or triangles to simulate saddle. Place silver dragées on top of each antler or use to decorate saddle of reindeer.
