This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Jay's Pea Soup

Ingredients

  • 1 medium onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 1 quart water
  • 1 can canned peas
  • 1 can green beans, canned, optional
  • 1 can canned tomatoes, optional

Directions

  1. Simmer onions, carrots, celery or other greens as desired.
  2. Add water, seasoning to taste and cook until almost done.
  3. Add 1 can peas. Cook until the greens are cooked through.
  4. Add string beans and tomatoes, if desired.
